A useful rule of thumb is that a rabbit eats roughly an amount of hay equal to its own body size; for a 2 kg rabbit that comes down to about 150 to 200 grams per day. Refresh the hay a few times a day with a fresh handful, even if the rack isn't completely empty yet.
Variety is best for your pet's gut health: the more variation in hay types, the wider the mix of fibre, herbs and grasses it gets. A schedule that works well in practice: 3 days Austrian alpine hay, 3 days German herb hay and 1 day meadow hay. This way you combine the premium softness of alpine hay, the tooth-wearing strength of herb hay, and meadow hay as a sturdy addition. Prefer to keep it simple? A mix of alpine hay and German herb hay is already a great combination.

Hay and straw look similar, but are very different: meadow hay is dried grass and serves as daily feed, rich in fibre and nutrients. Straw is the dried stalk of a grain crop, much coarser and lower in nutrients, and is mainly used as bedding or nesting material — not as feed. So always give your rabbit or guinea pig enough hay; straw is not a substitute for it.
